Who wants to split a banana ? A vegan recipe

Bonjour guys ! I don’t know what’s the weather’s like where you are, but here in the South-West of France the past days have been so hot ! I don’t complain, I lingered to see the sun, and now I can finally bronze on my terrace ( and sweat, glamorously of course ). Anyway, hot days mean fresh drinks and fresh food, and since I have a sweet tooth I decided to make ice cream. But not a basic one, a vegan ice cream. The recipe is pretty simple, like most of the recipes I post on the blog because cooking shouldn’t be binding. Moreover, it’s Summer which means that you will probably see your family or your F.R.I.E.N.D.S ! And nothing’s better that sharing a cup of ice cream to catch up right ?

So, if you want to know how to make a vegan banana split to impress everyone here’s the secret :
Serve 4 :

Chocolate ice cream :
-2 cans of coconut milk
-2 cups of cacao powder
Blend until well combined. Place in the freezer for at least 2hours.

Strawberries ice cream :
-2 cans of coconut milk
-2 cups of frozen strawberries
-1 tbsp of sweetener if you like, I didn’t add any
Put the ingredients in the blender and mix until it’s smooth. Place in the refrigerator for a couple of hours.

Banana ice cream ( the easiest thing ever ) :

-4 frozen bananas
Mix them until smooth, and voilà ! Reserve it in the refrigerator.

Chocolate sauce :

-1 tablespoon melted coconut oil
-1 tablespoon cacao powder
Mix the ingredients until you have an homogenous sauce. You can adjust the quantity of cacao powder depending on your taste and the result that you want. If you want a liquid sauce, add more coconut oil. You can also put the sauce in the microwave for a few seconds to melt it and have a hot sauce on top of ice creams. I personally like the contrast between hot chocolate sauce and cold ice creams.

Coconut whipped cream :
-1 can of coconut cream ( very cold )
-1tpsb of vanilla extract, but again it’s optional. I don’t think that it’s necessary to add any sweetener in this recipe, but do as you prefer
Beat the ingredients until it actually looks like a whipped cream.

You can add any toppings that you like : shredded coconut, almonds, fresh fruits… And the candied cherry. This is the basic recipe but you can choose any fruits that you like. Let your tastes and your imagination lead you.

If you tried to make vegan ice cream let me know if you liked it and if you see the difference with a regular ice cream. What’s your favorite ice cream flavor ? Mine is coconut, I’m a coconut addict anyway ….

I wish you a very good day, Bonne dégustation, et à bientôt les petits Chefs !
