Hello every one ! I hope you’re doing great. And if you’re not, I have the perfect thing to cheer you up : a vegan muffins recipe ! When it’s hot, I personally prefer eating fresh food, especially juicy fruits. This recipe, like most of my recipes, is gluten free, lactose free, sugar free and fat free. It’s very simple, you don’t need much ingredients nor a developed pastry technique. Let’s jump into it right away shall we ?
For approximately 12 muffins you will need :
Dry ingredients :
– 2 cups of gluten free flour
– A pinch of salt
-1 tbsp of baking powder
-The zest of the fruits
Wet ingredients :
-1 cup of soy milk ( or almond milk )
– 1 cup of lemon, orange, lime, yuzu and grapefruit juices
-1tbsp of honey ( or agave )
Take two bowls : put the wet ingredients in one, and the dry ingredients in the other. Mix the ingredients in each bowl together, then add the dry ingredients in the bowl of the wet ingredients. Don’t add the dry ingredients in one time, do it spoon by spoon while stirring vigorously. Once that it’s done, put the paste in muffins moulds and bake for around 20 min at 180 C°. Depending on your oven it might take a little bit more time, to after 20 min put the blade of a knife at the center of one muffin. If it comes out clean it’s baked, if not let the muffins for a little bit more time.
And because we are greedy we want a glaze :
-1 cup of powdered sugar
– 1 tbsp of the same citrus juice used for the muffins
Put the sugar in a bowl and add the juice while stirring. When your muffins are baked, let them cold for a few minutes, then take them out of their moulds. Add the glaze on top of them. What I like to do is to add some of the zest that we used in our muffins on the glaze before it dries. It gives a nice touch in the visual aspect, but it also give a little something to the taste. Indeed, citrus are acide fruits and you need to find the right balance between the acidity and the sweet of the glaze. Of course it depends on your taste, if you don’t like acidy that much skip the « zest on top » step and use vanilla soy milk for a sweeter side. You can also add vanilla extract in your muffins mixture, or coconut sugar.
