Recipes serie #8 : Risotto alle verdure

Hello guys ! Today’s article is about fewd. This recipe is very simple so it won’t be a long article. I will share with you my risotto all verdure recipe. I’m half Italian and totally vegetarian so I have to find alternative to basic recipes I love but which contain meat. I loooove risotto, but most of the time there is meat in Italian sauce (bolognese for exemple). If you are not vegetarian, you can totally add meat in this recipe. Beef or chicken would be the best meats to use in this recipe. Without furthermore waiting, here’s the ingredients list :

-risotto rice (obviously)

-vegetables ( I’ve used tomatoes, onions, zucchinis, carrots and eggplants )

-parmigiano reggiano

-olive oil

-salt and pepper

-white wine ( optional )

See, when I told you that it’s very simple ? You don’t need much at all !

Risotto rice is special : it inflates because it absorbs a lot of water. So to begin put a little bit of boiling water in a large pan, a little bit of olive oil so it won’t stick, salt and pepper to give more taste and white wine. The wine will give it a little something, but don’t worry with the heat only the taste of the wine will remain, the alcoholic side will disappear. Then, put the rice in this mixture and add the water as measure as the rice is inflating. Keep stirring because like I said risotto rice is thick, and you don’t want it to look like plaster. When the rice is almost cooked, add the vegetables -cooked- ( mine were already prepared ), stir everything until it’s homogenous. When you are satisfy by the texture of it, add the parmigiano at the last minute. Voilà, it’s done !

You better eat it rapidly because it gets cold and sticky very fast. It’s a complete, economic, rapid and easy meal – and tasty of course haha ! It’s the kind of meal you can prepare when you have guests and not lot of time to cook. They will be impressed and their belly satisfied ! Since it’s made only with vegetables, it’s not a too heavy plate, so you can still please yourself with the dessert. If you decide not to put the parmigiano, it’s an even more healthy recipe, even though a spoon of cheese won’t kill you ! Everything is in choosing the right ingredients and in the dosage. You can totally eat tasty things without adding tones of sugar, salt, fat… this is what I’m trying to show you through all my recipes.
