Recipes serie #1 Pain d’épices

Hello guys ! I love cooking, so I thought «Why not post recipes of some meals I’ve made ? » Please don’t judge the quality of the pictures, they were taken with my phone after I’ve cooked them. Pictures were not taken with the idea that they will once be published, so they are not really attractive haha ! Though my realizations could not seem really appetizing, I assure you they tasted good ! I don’t know why, but each time I cook my meals look like a mess, but they are really tasty. Taste is more important than appearance when you want to eat something, but a good presentation is also important in my opinion. Anyway, those meals were not destined to be served at Le Grand Véfour.

Pain d’épices

I know winter is gone, but months ago I’ve made a Pain d’épices, which is a typically european christmassy recipe. It doesn’t mean that you can’t eat it all year long…
When it comes to recipes, I’m a freestyle kind of Chef. I find inspiration online, in magazines, in restaurants… But I never make the same recipe that any one else, I don’t copy, I improvise. So the measurements are not precise, excuse me for that. But imagination is important, no matter the subject, and while cooking I like being taken away by ingredients and see what comes out of them.
In this pain d’épices there are :

gluten free flour
one pinch of salt
cinnamon
four spices mix
orange marmelade
olive oil
honey
baking powder
plain yogurt

As you can notice, there is no milk, no butter, no eggs, no sugar. It’s vegan, gluten free, sugar free, 100% healthy and 100% tasty ! I’ve added a little bit of caster sugar on top, it’s prettier.

I’ve baked it in the oven for approximately 30 min. It smelled so good in the kitchen ! You can eat it as it is, spread honey or marmelade on top. Personally I like it nature with my tea. The advantage is that you can conserve it for days. It will be a little dry after a few days, but dipped in a hot beverage it’s really good. Let me know if you’ve tried this recipe.
